Cranberry and White Chocolate Chip Pancakes with Cinnamon Sugar

Dubbed 'Cranadian Pancakes' by my friends in Scotland, this recipe has become a holiday favorite.
2 eggs, beaten2 1/4 cups milk1/3 butter, melted
1 cup white flour1 cup whole wheat flour4 tsp baking powder1 tbsp sugar1/2 tsp salt2 cups fresh or frozen cranberries1 cup white chocolate chips or pieces
In large bowl combine eggs, milk and butter. In separate bowl sift together dry ingredients and add to wet mixture. Blend until batter is well mixed but slightly lumpy (leaving small lumps will result in fluffier pancakes). Stir in cranberries and white chocolate pieces. With 1/2 cup ladle, pour batter onto heated non-stick griddle. The pancakes are ready to flip when the surface bubbles begin to burst. Serve warm with Cinnamon Sugar Topping (see below).
Makes 12 medium sized pancakes. 

Cinnamon Sugar Topping
1/2 cup brown sugar1 1/2 tsp cinnamon1/4 cup butter, melted
In small bowl combine brown sugar and cinnamon. Brush pancakes with melted butter and sprinkle generously with cinnamon sugar mixture.

I've personally tasted the lovely Ms.Morris' pancakes and this has to be the tastiest. Though he chocolate maple pancakes are wonderful too. I think Ms.Morris needs to release a pancake cookbook.

I have also tried Michelle's pancakes and these are delicious, the cinnamon sugar is so good and white chocolate and cranberry works so well together. Even my husband who doesn't like white chocolate and isn't keen on cranberries loved these and went for seconds!! I can't wait to have them again!!!!

Auntie Michelle makes the best pancakes. sometimes she adds big gooey chocolatey bits on top with the cinnamon.

After we tasted her pancakes we were in heaven. I can't wait for my birthday when she will be making me more pancakes, cupcakes..er, cake...and more goodies. I'd hire Mimo to make pancakes for my wedding. Who needs cakes when you have Mimo's pancakes.

P.S. She makes fab cake too

As my nephew mentioned, Michelle's pancakes are the best. I'm not a chocolate person but I really like these pancakes.

I tried this recipe out yesterday. Was a bit concerned about adding the white chocolate and the resulting lumpiness as she'd mentioned but they came out perfect. Was surprisingly easy to make.

Can wheat flour be used for the whole thing as opposed to 1 cup white and 1 cup wheat?

Regarding the question concerning cinnamon butter, there is a commercial cinnamon spread that is available in most grocery stores in the condiment section (usually near the honey). I can't recall the brand name but it is tasty and perhaps could be used as a substitute for the cinnamon topping outlined above. If you try it, please let me know.

RE: Wheat flourI have tested this recipe using white flour only and whole wheat flour only and found that the best results came from a combination of the two. Using entirely whole wheat flour resulted in a heavy pancake that was a little too dense in my opinion. Using only white flour, on the other hand, worked well with the recipe and is probably a better option than the whole wheat flour alone. That said, the two flours - as per the recipe - strike the best balance in terms of taste and texture, AND score some points in the nutrition department too.

they were delicious but I don't have much of a sweet tooth so I cut back a bit on the chocolate chips (probably to about 3/4 of a cup). Delicious!

I, too, have had these pancakes and they are fantastic.  Better yet, they are easy to prepare.  I thought that this must have been a family recipe of some sort, but it is not, "Mimo1" created it on her own.  Kudos!
